This research explores the transformation between the food culture constructed by rice noodles which is so called Migan in Chinese and the identity of ethnic groups of Zhongzhen New Village, Taoyuan. To realize the relationship and the change of the ethnic identity of Zhongzhen New Village, Yunnan's home-made diet, Migan, is not only a daily diet but also an important issue of ethnic identity for villagers in Zhongzheng New Village. Immigrants arriving in Taoyuan, Taiwan, from a foreign land in the Yunnan-Myanmar border area, the symbol of the army from the country given by the “Yunnan People's Anti-Communist Salvation Army” was transformed the code name of the Yunnan ethnic identity into "Zhongzhen New Village (loyal new village)”, which represents the legacy of loyalty, spirit, homesickness. By means of the characteristics of a single ethnic group, the region has developed a diverse village model in which ethnic groups from different provinces harmoniously through the diet-Migan. This special rice noodles derived from Yunnan has meaningfully sustained and made the food culture of Taiwan proud and innovative. Each Migan's taste in shops in Zhongzhen New Village deeply relates to and relies on marriages, household dependents, community effect, different stories and other influences. Various factors have condensed the Zhongzhen New Village into a colorful salad platter mode without conflict between one another. Nowadays, Zhongzhen New Village attracts many Thai, Burmese, Indian, Vietnamese and other new immigrants into the area. It is Zhongzhen New Village that has become one of the largest exotic food gathering places in southern district in Taoyuan. Annually, ”Migan Festival” is held by authorities. Due to the death of Chiang Kai-shek, and the demolition of the dependent villages, the ethnic group was once again separated, and the crisis of the identity of the Yunnan ethnic group and cultural inheritance also reappeared. When facing the uncertain future, Migan reconnects the life of the Yunnan ethnic group in Taiwan. The rise of Migan shops depicts their migrant history and the process of the transformation of their national identity and ethnic identity. Therefore, Zhongzhen New Village was able to find its place because of Migan.
